To start your own kombucha SCOBY without a mother, you'll need a few ingredients:

1. Unflavored, raw, and unpasteurized store-bought kombucha: Look for a brand that contains live cultures. Avoid any with added flavorings or preservatives.

2. Sweetened tea: Brew a batch of black or green tea, then add sugar to feed the SCOBY during fermentation. Let it cool to room temperature.

Steps:

1. Prepare the sweetened tea and let it cool to room temperature. (I use a consol bottle)

2. Pour the store-bought kombucha into a clean glass container. Use about 10% of the volume of your container.





3. Add the sweetened tea to the container, filling it to about 90% capacity.

4. Cover the container with a breathable cloth, like a coffee filter or tightly woven cloth, and secure it with a rubber band to keep out debris and insects while allowing airflow.

5. Place the container in a warm, dark place where it won't be disturbed.

6. Wait for about 1-3 weeks for the SCOBY to form. During this time, the liquid will ferment and a new SCOBY will develop on the surface.


Remember that the process may take longer without a starter SCOBY, and there is a chance it may not develop properly. Be patient and keep an eye on the progress. Once your new SCOBY has formed, you can use it to brew your own kombucha.
